Nelson Chaves is a model producer from Yacuanquer, a municipality in Southern Nariño which is responsible for some of the best coffee in all of Colombia. Nelson's Farm, La Esperanza, sits at a cool 2,150 meters above sea level and mostly consists of the Caturra variety with a small mix of Castillo.
At such high elevation, this coffee matures slowly. The heat of the Colombian sun paired with cool nights ensure the development of complex sugars and depth of flavor. Picked at their absolute ripest by Nelson and a small group of pickers, the cherries are then fermented for twenty four hours, washed, and dried on raised beds for fourteen days.
Nelson’s attitude of keeping things simple and calculated, coupled with his desire to make yearly improvements to farm infrastructure, has committed us to buying Nelson’s full harvest each year.
