Nelson Chaves Natural is the result of years of close collaboration. Each cup of this expertly processed high elevation Colombian natural reflects the care with which it was grown and processed.
The terroir around Chaves' farm, La Esperanza, combines with the varietal characteristics, interplaying round sweetness with a delicate citrus edge. The high elevation allows the cherries to mature slowly. This intensifies the rich sweetness and complexity of the coffee, providing a perfect starting point for processing. After careful hand-harvesting, the whole cherries are laid out to dry on patios under the sun, where Nelson and his team turn them regularly. This traditional, labor-intensive approach allows for steady, even drying and creates the flavors we have come to love from Colombian naturals.
