We’re thrilled to welcome back Decaf Huila Rainbow, sourced from Colombia’s celebrated Huila region in collaboration with our friends at Azahar Coffee. This sugarcane decaf brings together seven producers across four municipalities, grown at altitudes of 1,650 to 2,000 meters.
This lot was decaffeinated at the Descafecol plant in Manizales, Caldas. The decaffeination agent used is ethyl acetate (also known as ethyl alcohol) and is derived from a mix of acetic acid (vinegar) and a natural extract distilled from sugar cane, blackberries, beets or sometimes grapes. The beans are steamed to open their pores, then repeatedly rinsed in ethyl acetate to draw out the caffeine, and dried to an optimal 10-12% humidity. This careful, methodical process preserves the bean’s natural character, elevating complexity and flavor clarity for a decaf that’s every bit as rewarding as any full-strength cup.
